Discipline and good vibes are breathed in his kitchen. “Let’s go with all we’ve got” and “yes, we can” are constantly repeated phrases in this space that could be called his temple of creation.
Victor Jayim Chocron Gammal, known as @victorpastries in social networks, is a pastry chef who at his young age has conquered local and international spaces thanks to the quality and aesthetics of his products.
Born in Caracas (Venezuela) on October 18th, 1995, son of Abraham Chocron and Esther Gammal, describes his childhood as an unforgettable experience in a magical and harmonious way. “I knew many places inside and outside of Venezuela. I like to believe that I had a dream childhood, I enjoyed it very much”, Victor states.
It is clear to see what his profession and passion are, but confesses he has always been closely linked to the sports world, which is why he’s a follower of various disciplines: “Athletes like Nadal, Cristiano Ronaldo, Xabi Alonso, Lebron James, and Bob Abreu, were my role models in my teenage years”, he declares.
Even though haut cuisine has a lot to do with intuition and a good palate, @victorpastries didn’t leave his academic training to chance, so he studied English, Basic French, International Cuisine, Bakery, Pastry, Gastronomic Marketing, and Administration.
Knowledge that has altogether helped him build a successful business model with high quality standards and presence inside and outside Venezulan lands.
He studied at the Instituto Superior Mariano Moreno (ISMM) gastronomy school at its headquarters in Venezuela, Argentina, and Miami, hence his proximity with other types of cuisine that have allowed his current products to be a fusion of flavors and presentations of different trends.
Victor Chocron says that during his childhood he liked to play guitar, soccer and tennis, and still practices the latter frequently. Cooking is not only his profession and business, but also a hobby he enjoys in his free time. Also, he is a soccer fanatic.
The book Modernist Cuisine: The Art and Science of Cooking, written by the renowned chefs Nathan Myhrvold, Chris Young and Maxime Bilet; is one of his favorites, he says that he usually complements other cookbooks, especially dessert cookbooks, which is his preferred area.
This young chef represents that generation of creative and enterprising venezuelans that are touching different levels of success through their talents. In this sense, Victor is clear and precise with his interests: “I am motivated to make my desserts with the greatest possible effort”, he says.
His brand, Victor Pastries Gourmet, has achieved closeness with social works, such as the Un Par Por Un Sueño organization, with which he has dedicated himself to support groups with special needs by supplying products made by his pastry shop, also linked with donations of allied brands, in the city of Caracas, Venezuela.
It was this experience that led him to create a space that has given him many satisfactions: “Seeing the great need that children in my country have to be helped, I have proudly built a foundation called Fundación Victor Pastries, of which nowadays I am very proud of”, he adds.
He says that his philosophy is to help without expecting anything in return, which is why he doesn’t expect to be rewarded or awarded by his social work.
Do for the present and the future.
He refers to a phrase by Walt Disney that marks his actions: “Ask yourself if what you’re doing today will guide you to what you want to be tomorrow”. With this, he is inspired to lay the foundations of the present and prepare for the future.
He also takes his parents as a source of inspiration, “with their values they have taught me that you can achieve everything you set your mind to, despite adversities, as long as you give your best”, he reveals.
But he has also established his own values: sincerity and respect. Which have favored his business model, the relationship with his work team, and the positive results obtained.
@victorpastries not only counts on his social networks with followers, but with fans of his desserts, satisfied clients and dessert lovers that attest the unbeatable flavor of his creations.
He currently resides in Caracas, city in which he manages his companies @victorpastriesgourmet and @victorpastriescookies
He is a young man focused on his career, but not oblivious to what’s happening in the world. He has clear opinions on issues such as racism: “We currently are dealing with issues as human beings in general, regardless of race, gender, religion, or even political party”, he says.
He reiterates the importance of every human being’s value, and of being promoters of tangible change: “Everyone deserves the same respect and if we are tolerable of each other, we can succeed as a society”.
